1 OR 2 TABLESPOONS MAYONAISE

1 TEASPOON JALOPENO MUSTARD

SALT

BLACK PEPPER

JALOPENO SLICES

CAYENNE PEPPER

PLACE EGGS IN POT AND COVER WITH WATER AND PLACE LID ON POT. BRING TO BOIL ON MEDUIM HEAT. REDUCE HEAT TO LOW AND BOIL 12 MINUTES. ( TO KEEP WATER FROM BOILING OVER, YOU MAY NEED TO USE THE SIMMER SETTING).  RUN COLD WATER OVER EGGS FOR 2 MINUTES AND THEN PEEL EGGS.

SLICE LENGTHWISE AND REMOVE EGG YOKES. PLACE EGG YOKES IN FOOD PROCESSOR. ADD MAYONAISE AND PROCESS. BE CAREFUL TO NOT USE TOO MUCH MAYONAISE AS IT WILL MAKE THE YOKE MIXTURE TOO SOFT TO MAINTAIN A NICE SHAPE WHEN FILLING THE EGGS.

ADD SALT AND BLACK PEPPER. TOP WITH JALOPENO SLICES AND SPRINKE WITH CAYENNE PEPPER.
