Okay – as you can see from the photo – its really a cake!

 You can make this all from mixes but I prefer to make pudding from scratch and the icing also.

Cake Recipe

Heat oven to 350. Grease and flour pans. (I used two 9 inch pans)

1 box Duncan Hines Yellow cake mix

3 eggs

1/3 cup oil

1 1/3 cup water

Follow directions on box. Allow cake to completely cool before adding pudding filling.

While cake is cooking, make pudding. This recipe will make a little over double what is needed.  You can split this recipe, or just enjoy the extra pudding.   If making instant pudding – you will only need approximately one cup.

Pudding recipe:

1/2 cup sugar

3 egg yolks

1 egg

2 cups milk

3 tablespoons all purpose flour

dash of salt

2 teaspoons vanilla

Mix everything except the vanilla and cook on low constantly stirring. When thickened remove from heat and add vanilla.  Allow to completely cool before spredding on one of the cake layers. Place other layer on top.

Icing Recipe

1/2 stick butter or margarine (do not use light margarine)

1 1/2 tablespoons cocoa

3 tablespoons milk

1/2 teaspoon vanilla

1/2 box confectioners sugar

Cook milk, butter and cocoa on low heat stirring constantly. It will thicken and come to a boil. Remove from heat and add vanilla and confectioners sugar.  Wait about 5 minutes and then drizzle over top of cake.  I used minature marshmallows to decorate and to also make it more portable. Place in cake saver and keep refrigerated.
