This is a great fast recipe. You only have to sacrifice a little pudding texture to cut out a lot of calories!


¾ Cup Splenda

4 Tablespoons Flour

¼ Teaspoon Salt

4 Cups Skim Milk

6 Egg Yolks beaten

2 Teaspoons vanilla

1 Box Reduced Fat Vanilla Wafers

2 Medium Bananas sliced

1 Large Tub Light Whipped Topping


Mix Splenda, flour, salt and milk. Cook in double boiler or heavy large sauce pan on medium low heat. Stir constantly. When well heated, remove 2 tablespoons heated mixture and add to beaten egg yolks. Stir and add back into pan. Cook until thickened. (It will thicken more after cooling and refrigeration.) Remove from heat and add vanilla. Cool completely. After pudding has cooled, mix in 2 cups light whipped topping. Layer bananas and wafers in a 9×13 casserole dish. Pour pudding over bananas and wafers. Spread remaining whipped topping over the top. (Or make meringue from remaining egg whites)  Refrigerate for 4 hours.
