SALMON PIE

4 Eggs

2 Cups Cooked Rice

2 oz Cheddar Cheese

1/8 Teaspoon Salt

1/2 Teaspoon Black Pepper

1 Cup Salsa

1 14 oz Can Salmon, Flaked

3/4 Cup Skim Milk

3 oz Cheddar Cheese

2 oz Cheddar Cheese for Topping

Heat oven to 425. Mix 1 egg, cooked rice, 2 oz Cheddar Cheese, salt and pepper and press along bottom and sides of a 8×8 casserole dish sprayed with nonstick cooking spray. Cook for 15 – 20 minutes. Mix the rest of the ingredients, saving 2 oz of cheddar cheese for topping. Cook 45 – 50 minutes or until set at 350. Let stand 10 minutes before serving.
