SOY SAUSAGE “OMELETS”

 

WARM UP LEFT OVER FILLING FROM HEALTHY STUFFED MUSHROOMS RECIPE

 

1 ½ CUP EGG BEATERS

½ CUP SKIM MILK

DASH OF SALT SUBSTITUTE

2 SLICES OF LOW FAT PEPPER JACK CHEESE OR SOY CHEESE

PAM

MARGARINE

 

Spray electric frying pan with Pam. Turn fryer on low. Melt a little margarine in pan. Mix Egg Beaters, Milk and salt substitute. Pour into pan.  Egg Beaters fry up a little bubbly. You will need to poke a fork through these bubbles to break them. Keep an eye on the edges of the eggs while cooking. Add a little margarine to the edges to keep omelet from sticking if necessary. When egg mixture gets “set”, carefully cut into 4 squares. I like to it cook both sides, so I carefully flip them over to cook. Immediately, place filling on 2 of the squares. Place the cheese on the other two. Place the 2 cheese squares on top of the filling squares. Remove from pan and serve immediately. Makes 2 large omelets.
