VEGGIES & TOFU IN PEANUT SAUCE

 

black sesame seeds
1/2 pound extra firm tofu (pressed)

1/2 cup chunky peanut butter
1/4 cup water
1 tablespoon rice vinegar
2 tablespoons low-sodium soy sauce
1/2 tablespoon garlic chili pepper sauce
1/2 tablespoon sesame oil+1/2 tablespoon for sautéing vegetables
1/4 teaspoon ground ginger
1 tablespoon lime juice
1/2 tablespoon cactus juice

1/4 cup cactus strips
1/2 cup sliced carrots
1/4 cup sugar snap peas
8 oz mushroom pieces

Cut Tofu into large pieces and coat one side with Black Sesame Seeds. Fry in pan coated with Pam. Set aside.

Mix chunky peanut butter and water by heating in the microwave. Add rice vinegar, low-sodium soy sauce, garlic chili pepper sauce, ½ tablespoon sesame oil, ground ginger, lime juice and cactus juice. Set aside.

Sauté vegetables in sesame oil. Add peanut sauce mixture. Stir well. Add tofu and serve over rice.
