ZESTY SHRIMP CREOLE

2 Medium Sweet Onions chopped

¼ cup chopped and seeded hot peppers

2 cups chopped celery

2 tablespoons margarine

2 cans crushed tomatoes

1 bunch fresh parsley chopped

½ cup catsup 1 tablespoon lemon juice

2 teaspoons Old Bay seasoning

2 tablespoons Chili Garlic Sauce

2 pounds uncooked, cleaned medium-size shrimp

Sauté onions and celery in margarine until tender crisp. Add hot peppers. Stir in tomatoes, parsley, catsup, lemon juice, Old Bay seasoning, and Chili Garlic Sauce. Cover and bring to a boil. Reduce heat and simmer for 10 minutes. Add shrimp. Cover and simmer for 5 minutes or until shrimp are pink. Stir as needed. Serve over rice.
