6 MEDIUM SWEET POTATOES BAKED UNTIL SOFT

3/4 STICK MARGARINE

2 EGGS

1/2 CUP MILK

3/4 CUP SUGAR

1/2 CUP FLOUR

1/2 TEASPOON SALT

1/2 TEASPOON VANILLA

PEEL SWEET POTATOES. DO NOT USE THE END PORTION IF STRINGY.

CREAM  SUGAR AND MARGARINE. MIX IN EGGS, MILK, VANILLA  AND SALT. ADD FLOUR AND MIX JUST UNTIL BLENDED. SET ASIDE. BEAT SWEET POTATOES UNTIL SMOOTH. IF STRINGS ACCUMULATE ON BEATERS, CLEAN BEATERS OFF AND DISCARD. MIX IN REST OF INGREDIENTS AND POUR INTO 9X13 CASSEROLE DISH SPRAYED WITH PAM.

TOPPING:

1 CUP BROWN SUGAR

1/2 CUP FLOUR

3/4 STICK MARGARINE

ABOUT 1 1/2 CUP PECAN HALVES

HEAT SUGAR AND MARGARINE TOGETHER IN MICROWAVE  UNTIL MIXED, STIRRING OFTEN.

MIX IN FLOUR AND POUR OVER SWEET POTATOES. PLACE PECANS ON TOP. BAKE FOR 30 MINUTES UNTIL TOP IS SLIGHTLY BROWN AT 325 DEGREES FOR GLASS DISH AND 350 DEGREES FOR METAL PAN.
